Here’s for skilled foodies and healthy lifestyle adepts, a new address is to be written down on your restaurants to test asap. It’s Ensuite, the newest restaurant set in Rue des Petits-Champs. This restaurant offers a healthy and gourmet cuisine all week long as well as a hearty brunch on Saturdays. Of a perfect rigor, each and every dish is submitted to a naturopath’s validation, Anne-Flore Martinez, in order to guarantee a nutritionally balanced and flavorful meal.
This restaurant is Jonathan, Boris and Alexandre’s story, three friends who met at business school, who went their own way before meeting again. One went to Los Angeles, another to New York and the last one in Australia. Each one of them has been soaked up in the city and the country where he trained. They met again in Dubai, at Burj Al Arab Jumeirah, the only seven-star hotel in the world, before coming back to France to create their own concept, Ensuite, in Paris.
By getting inspired by their experiences abroad, they came up with a friendly place that offers a healthy and gourmet food. Here, as a sign of confidence, dishes are cooked, or put together, before your eyes. The restaurant also has the merit of adapting itself to the varied needs of its clientele. So, if you’re into vegan, gluten-free or simply not into one of the elements of the dish, you can replace it with something you’ll like more. In the end, you can personalize your menu and makes it your very own.
The other particularity of the restaurant is juices. Here, no juicer, but juice extractor. Why? Because, with it, your juice is squeezed cold so that it keeps the used fruits and vegetables vitamins. It gives a flavorful drink and it doesn’t need added sugar and it’s perfect like that. Properties of each juice are specified on the menu and, if you wish to reinforce your immune defense, you can choose the Pick-Up (red apple, pear, white grape and vanilla), if you want a detox drink, we highly advise you the Rehab (kale cabbage, broccoli, granny apple, cucumber, lime) and finally, if you want to recharge your batteries, you can have an energizing drink.
Here, quality and quantity are not left out. If you find yourself at Ensuite on a Saturday, you can enjoy a hearty and healthy brunch that will shake up your taste buds. Two menus are proposed, the bird menu for €19.90 that includes a juice, a fruit salad, a dish with scrambled or poached eggs with viennoiseries, bread, jam, honey, tea or coffee at will. The second menu, the Eagle at €24.90 offers the same thing but with an additional dessert.
You can choose between a warm dish with steam-cooked grenaille potatoes, chicken with Provence herbs, red bell peppers, mushrooms with parsley and shallots, parsley and cilantro and two cold dishes, the first being a duo of quinoa with herbs, semi-cooked lemon-marinated salmon served with young sprouts mix, radishes, green apples and red onions. The second, certified vegan, offers a duo of quinoa with herbs served with kale cabbage and kiwi, mushrooms with parsley and shallots, avocado, squash seeds and pomegranate.
Those who fell for the Eagle menu can choose between varied energy bowls or pancakes cooked with coconut milk likely to please everyone. Among the first, there’s the irresistible acai bowl with acai flesh and mixed bananas, kiwi, homemade granola, pecan, honey & cranberries. A fresh touch that will end this brunch in full glory.
