Eating healthy, balanced and gluten-free in an Italian restaurant…? It’s now possible at Little Nonna, a gluten-free restaurant offering genuine Italian cuisine in Paris 17th arrondissement. Pizza, pasta, charcuteries boards, Stracciatella, Bruschetta and other antipasti… A little Italian sunbeam in the heart of Paris.
His “nonna” (“nanna” in Italian), Marco loves her cuisine so much he drew up his menu around the recipes and the love she used to put it when she cooked. And like his grandmother, the chef is very careful when its comes to offering healthy dishes by selecting organic products from small growers while privileging short circuits. A homemade and handmade pizza dough, such as pasta, gnocchi, bread and focaccia. We particularly love the Dolce Vita pizza with a pleasant and well-balanced dough, the same goes for the Lobster Linguine served in a pot, cooked al dente and full of flavors.
Gluten-free preparations to offer an alternative to wheat flour and accompany foodies in their process to “eat better”. The chef tried many recipes to replace wheat without spoiling his “nonna’s” recipe and he found the solution: the Molino della Giovanna flour he orders from the city of Piacenza in Lombardy. A blend of corn flour, complete rice, semi-complete rice and buckwheat for a gooey and soft pizza dough.
When it comes to fresh pasta, the chef went for corn flour Le Veneziane, for it cooks well. In terms of dessert, Maison Foucade provides chef Marco Casali with sweet treats. It doesn’t prevent the chef from offering his very own dessert, that still are 100% gluten-free. Even juices are homemade: nectars, smoothies and other syrup are from Maison Meneau.
And for aperitivo lovers, the house also offers a selection of nibbles to accompany your glass of wine, Spritz and other cocktail: a delicious Parma ham board, scallop carpaccio, PDO buffalo mozzarella or the spicy pizza to share are as many dishes that come and trigger our taste buds. The Spritz is particularly good and very well rosé. So, when are you going?
