Maybe have you heard of Fulgurances, this restaurant in Paris 11th arrondissement that welcomes you cooks in residence. Apparently, this concept is very seducing since Les Résidents – open earlier this year 2018 in Paris 17th arrondissement – works on the same principle as the flying chefs.
About every six months, a new chef comes to take the helm in the kitchen for the greatest happiness of foodies looking for new culinary experiences. So, if today (until June), the resident cook is the Basque Mathieu Moity, the next one could be Japanese, Danish or Argentinian, who knows? Actually, Les Résidents would like to ask the rising stars of the foreign gastronomy to come for even more surprises in the plates!
As for us, we could discover Mathieu Moity’s talents and it was absolutely delicious! Using simple and seasonable ingredients, the young cook, who trained at many starred chefs, perfectly handles sauces and spices for a surprising and delightful result.
From the licorice sauce to the pepper and chocolate ganache, without forgetting the mustard pickles with smoked beer, every bite is awe-inspiring! Special mention to the “savory dessert” with a tarragon and granny apple ice cream and a light Sainte-Maure goat’s cheese mousse. Moving to wines, Les Résidents has a large range of natural wines and it’s very pleasing.
