Pansoul in Paris: Surprize new restaurant at the Concrète

Agence Surprize is in every mouth but this time, with a restaurant! Entitled PanSoul, this new gourmet address is to be discovered on the famous boat of the Concrète moored at Quai de la Râpée in Paris.

If you are looking for a new trendy, delicious and original restaurant, head to Paris 12th arrondissement.

It’s here, at Quai de la Râpée, and more exactly aboard the boat housing the famous parties of the Concrète that PanSoul has settled down.

Behind the address, we find the very prolific Agence Surprize to whom we already owe La Friche Richard Lenoir, the Weather Festival, the Hors-Série parties and the Concrete.

For PanSoul, in tribute to Motorbass first album, Agence Surprize came up with a friendly place with a seasonal menu that changes regularly, a supply of provisions via a short circuit, natural wines and a vertical rotisserie, meats from butcher Tristan Seguin, fish directly coming from Morbihan and Finistère… the whole orchestrated by Chef Alexandre Marchon.

This former customer relationship manager in advertising has decided to reinvent himself and follow his passion: cooking. After creating a Chef on Demand service, Maison Foucade entrusts him with creating a savory menu. In 2017, Alexandre is also contacted to rethink the 100% homemade menu for Monsieur Culbuto. Today, he’s at the helm of PanSoul restaurant.

On the menu? Two starters, two main courses, two desserts evolving according to deliveries such as, for instance, Concarneau mackerel cooked with a blowtorch and carrot condiments for €11, Golfe de Gascogne clams, served with green asparagus, white miso butter and Pecorino Fiore Sardo for €25 and even a 75% Tanzania chocolate ganache with Tonka bean and its hazelnut crumble and marjoram-infused whipped cream for €10.

With sunny days upon us, barbecue is obviously given pride of place to pork ribs, Montillos de Saint-Jacques de Compostelle sirloin steak with Xistora (Basque sausage with Espelette pepper) without forgetting mackerels and jumbo shrimp… the whole cooked vertically and slowly.
