Goodbye Safran and hello Le Collectionneur! Hotel du Collectionneur utterly changes and reveals a more welcoming and delighting setting. Good riddance to dark spaces and the restaurant divided into two parts (even though you can still privatize a part of the restaurant thanks to sliding panels).
The brand-new Collectionneur is bigger and more spacious. And the bonus is that it comes with a new terrace, a green patio where you’ll love to spend some time. It enables it to feature not less than 3 wonderful terraces: one in the front and onto the street, the new indoor patio and the famous and large terrace of the hotel. Allowing the restaurant to provide not less that 240 seats and 150 covers scattered across the 3 terraces.
Faithful to its image, Le Collectionneur has decided to play the Art Déco and design card. Marble tables, velvet seats, geometrical shapes and plays of lights create a harmonious whole.
In terms of cuisine, Joël Veyssière and Nicolas Amelin concocted you a menu just like them, a creative menu blending genres and revisits that is gourmet and modern at the same time. Get your hand on the excellent soft-boiled egg with spelt bulgur and citrus and watercress mousse. Softness and peps perfectly go along. Unless you go for the white asparagus, Ossau Iraty cheese cream generously served with cured ham from the Aldudes valley. Smooth and crispy, well-seasoned with a sublime mousse, it’s a yes for us.
Moving on to main courses, we literally fall for the tasty grilled octopus, that is perfectly cooked and oh-so soft. Mixed quinoa skillfully seasoned with passion fruit and kefir lime vinaigrette enhanced with guacamole, we love it. Meat eaters won’t resist the Black Angus Picanha steak with chimichurri sauce served with potatoes and peanuts, a timeless classic.

Finally, note that for a relaxing break, the bar has delicious signature cocktails such as this fizzy Basil Connection with strawberry, lime and ginger.
