La Poule au Pot, Jean-François Piège's new restaurant

La Poule au Pot, an institution in the Halles district of Paris, is coming back to life thanks to Jean-François Piège, as the chef has decided to take over the famous Poule au Pot and present dishes from France's culinary heritage with his own twist.

A veritable institution in the Halles district for over 80 years, La Poule au Pot has been given a new lease of life with the arrival of Chef Jean-François Piège. The chef's ambition? To develop dishes inspired by bourgeois cuisine, within the four walls of this authentic and legendary institution.

To achieve this, Jean-François Piège has devised a generous menu that is above all proud of France's culinary heritage. These include frogs' legs in parsley sauce, old-fashioned veal blanquette, shepherd's pie, beef cheek and snails in shell. Dishes simmered, au gratin or in sauce, symbols of a comforting, family-style cuisine, brilliantly twisted by Chef Piège.

As at his other three addresses, the chef makes a point of presenting products made in France: from frog legs to Petits Gris snails, not forgetting cream from Brittany pie noir cows.

In keeping with the character of La Poule au Pot, where tapestries decorated with bunches of grapes sit alongside wood panelling and Art Deco mosaic columns, Jean-François Piège has decided not to serve his dishes by the plate, but in large dishes and generous Le Creuset casseroles, placed on the table in front of the guests.
