It’s been 100 years that the Petrossian brothers have made France and French people discover sturgeon eggs, preserving the family institution devoted to caviar since 1815.
To celebrate this wonderful anniversary, Mikaël Petrossian has been inspired by his many travels and his love for street food to create a new version of the Rostoff, the half-sandwich, half-omelet creation rolled like a wrap and created two years ago.
Whilst Petrossian already created several recipes for the Rostoff – we remember the Juneau (Salmon eggs, Avocado, Grounded ginger); the Moscou (Smoked salmon tartare, Dill cream, Cucumber) or the Olympie (Taramasalata, tofu, Sucrine salad) – Petrossian presents for its 100th anniversary an even chicer version: the Rostoff Saint-Petersbourg!
Inside this new Rostoff, Alverta caviar chosen for its iodic character, its complex aroma and its length in the mouth. Here, it reveals its flavored when paired with mozzarella, ricotta, spinach sprouts, hazelnut oil and chopped hazelnuts.
