Why Chiquette? It’s as in La Petite Chiquette written by Louis Codet as a tribute wanted by the new chef, David Maroleau
Trained in very beautiful places such as George V, Ritz Paris, Lancaster, Maison Troisgros as well as Four Seasons in Palm Beach, David Maroleau came back to wanting to provide the cosmopolite cuisine on Chiquette menu.
At Chiquette, no set-menu but a menu filled with dishes revolving around seasons and the chef’s mood.
At the moment for instance, we have beautiful plates inspired by Asia, such as semi-cooked organic king prawn tartare, Koshi Hikari rice and lemongrass broth (€34) and pan-seared sea scallops with wakame butter, red curry marinière and coral, crispy vermicellis (€32), two dishes we particularly enjoyed.
We also have had the chance to heat the pork, cooked for several hours and perfectly candied and caramelized with Char Siu (soy, rose water, honey), served with Thai arancini and bok choi (€28) and another very interesting dish: A smooth and exquisite sunchoke cream to enjoy with smoked sunchoke chips, right before some pan-fried foie gras, glazed à la Périgueux (€24), smoked and brought to our table under a glass bell.
And for dessert, simple yet tantalizing offers around coconut, chocolate or Corsican clementine (€14). As for us, we went for the last option. A clementine sorbet twisted with calamansi and candied ginger, pink berry opaline, a dessert that is fresh and sour, perfect to wrap up this lovely meal.
If these dishes make you dream, to wait too long before tasting them. The menu is renewed every 6 weeks and it would be such a shame to miss them!
