Charlotte potatoes from Noirmoutier, caviar and lemony aigrelette cream

Pigeon cooked in a ballotine, candied leg and pan-fried foie-gras
Brie, black truffle
Caramelized Arlette and Madagascar vanilla
Frozen orange and mandarin soufflé, chestnut from Ardèche cream mousse.
