Hyatt Regency Chantilly launches the market’s brunch

4-star hotel Hyatt Regency Chantilly (open in February 2019) restaurants chef Christophe Scheller launches the Brunch du Marché [Market’s Brunch] for a mouthwatering Sunday’s meal. On the menu of Hyatt Regency Chantilly brunch? A warm dish, savory buffet (cheese, charcuterie, salads, seafood…), sweet buffet (fruits, viennoiseries, cakes…) and drinks (juices, champagne, hot drinks…). Everything is homemade and it's delicious.

CRAFT Le Marché Gourmand – one of the two restaurants of the 4-star hotel Hyatt Regency Chantilly providing a healthy, seasonal and gourmet cuisine – launches its Sunday’s brunch, the Brunch du Marché or Market’s Brunch.

In a green setting inspired by the countryside in the forest of the Château de Chantilly – set a 45-minute drive from Paris – this new hotel offers a quiet and relaxing moment for a weekend in the Parisian region.

CRAFT welcomes guests in an industrial setting with high ceilings dating back from its past as a factory, large glass walls and wooden and metal furniture. It also features a large and sunny terrace.

The Brunch du Marché offers several services, in different spaces, where guests can come and help themselves. It provides healthy dishes as well as very tasty dishes concocted by chef Christophe Scheller.

CRAFT brunch set menu includes the all-you-can-eat savory and sweet buffets, a warm dish, a glass of champagne and hot drinks (teas, coffees, chocolate...), water (filtered, still or sparkling) and fresh fruit juices squeezed on the spot (orange, mango, apple, red berries...).

On the Etals du dimanche [Sunday’s stalls], you have:

  • Fishes and crustaceans (crab pincers, prawns, whelks, smoked salmon, sand shrimps, oysters, smoked haddock...)
  • Vegetables (marinated cauliflower and carrits, eggplants, roasted asparagus and carrots, broccoli, tomatoes, bell peppers, green salads...)
  • Mixed salads (potatoes / artichokes, pasta / salmon / dill...)
  • Mini sandwiches
  • Cold cuts (rillettes, chorizo, chicken pâté en croûte, mortadella, Serrano ham, Rosette sausage, foie gras pâté en croûte...)
  • Cheese (Comté, Saint-Nectaire, Mimolette...)
  • Fresh fruits cut or whole (cantaloupe, watermelon, pineapples, pears, apples, grapes, strawberries...)
  • Candies
  • An assortment of breads
  • Viennoiseries and pastries (crêpes, brioche, chocolate croissants, chocolate mousse, strawberry tartlets, lemon meringue pies, chocolate tartlets, cream puffs, authentic Chantilly whipped cream flavored with pistachio...)

Aux fourneaux du chef [At the chef’s stoves], guests can pick their warm dish (among 4 recipes) cooked live in front of them: Egg Benedict, Fish & Chips, Tartare or Avocado Crostini.

The menu is very plentiful and everything looks so mouthwatering, we want to taste it all. It's hard to resist, even though you're not hungry anymore. We tried almost all the dishes available on the buffet. And everything was absolutely delicious, homemade, based on quality ingredients. Not even one dish failed us.

For the main course, we went for a Benedict egg with salmon. The chef drizzles a bit of balsamic vinegar on the hollandaise sauce. it's not much but it really brings some peps and it makes the whole difference. We also tried the Fish & Chips. Fries are fresh, homemade and super delicious. The fish was breaded and delicious.
