Polichinelle, vegetable buffet by Christophe Michalak and Steve Burggraf

Christophe Michalak and Steve Burggraf came up with a place where vegetable is king, where cooking follows the seasons, is local and delicious, the whole served on a buffet. It is called Polichinelle and it is open since 2019!

Christophe Michalak and Steve Burggraf have thrown themselves into a new culinary project in 2019, opening Polichinelle, a vegetable food restaurant serving buffet.

The pastry chef and Big Fernand founder have teamed up to create a new “genre buffet”. Together they have asked themselves very relevant questions: “Why is a buffet rarely tasty, generally badly presented or, sometimes, too expensive?”, “Why officially vegetarian tables lack some appeal?”, “How could we offer a vegetable repertoire that even the biggest meat lovers wouldn’t be able to resist, and without breaking the bank?

From these thoughts, they drew a promise: a seasonal, local, green and tasty cuisine delivered on a buffet within Hôtel Yooma in the Beaugrenelle neighborhood.

The 130-seat place has been created to house large tables for friends or families inside. Outside, gourmets will enjoy the chefs’ tasty dishes on a large 70-seat terrace including views on the Eiffel Tower.

On the menu, vegetables in all their shapes and sizes, but no meat nor fish. The main idea is to serve vegetarian or vegan food for a lesser cost, and show that you can have a full and very tasty meal without eating fish or meat.

This is more than a successful bet. The menu is served as a buffet but in individual serving sizes. You can choose off the buffet (because the look matters) but you cannot help yoruself. Waiters are here to do so and they finish the plating before your eyes adding some sauce or toppping...

The result is quite amazing: dishes are beautiful and mouthwatering. Once we have made our difficult decision, we realize everything tastes great. As a starter, the smoked goat's cheese cheesecake is delicious, so are the fried vegetables. Very tasty and well-seasoned dishes. Then, the spring carrots are served with bulgur, mascarpone and Kalamata olives smelling deliciously good.

As for the desserts, Christophe Michalak steps in with the delicious chocolate mousse, or raspberry-verbena granita, very refreshing at the end of the meal.

Moving on to cocktails, trust world’s cocktail champion 2016 Jennifer Le Néchet. She offers a list of alcohol-free beverages (fruit or vegetable juices...). And for each of them, she came up with an alcohol extra to turn your soft drink into a genuine cocktail?

Polichinelle has its own kitchen garden on the hotel's rooftop, where they grow aromatics served in dishes and cocktails.

 For lunch, enjoy a set menu, and for dinner, enjoy an all-you-can-eat buffet with smaller serving sizes to taste more.

Dogs are welcome at Polichinelle, and soon, there will be a kid-friendly brunch on Wednesdays. A good way to make children fall in love with vegetables.
