Calling all fans of south-inspired food! Roch Hôtel & Spa reopened the summer terrace and on the occasion, gives pride of place to southern cuisine. Chef Rémy Bérerd will serve dishes to share inspired by Italy, Greece, Spain, pairing cocktails and south-inspired dishes.

After last summer's barbecue, for this year's summer terraceRoch Hôtel & Spa has decided to shine a light on Southern cuisine. This confidential summer terrace opens from May 17, 2022, and shines a light on cuisine from the Mediterranean, the Aegean Sea and the Atlantic.

Open for lunch throughout the week, this summer 2022 terrace insired by the south unveils all its secrets in the evening for a pre-dinner drink and dinner. Furthermore, this year, chef Rémy Bérerd has come up with a menu with wine and coctail pairing for the aperitif, coming with 6 destinations between France, Spain, Italy and Greece: Antiparos, Porto-Vecchio, Formentera, Ischia, Cap-Ferret and Ramatuelle. So, from 5 p.m., thi small and hidden terrace in the heart of the hotel serves cocktails based on myrtle, Campari or cognac, to enjoy with a side of dishes to share such as tomato tartare and feta, lamb gyros, ewe's milk cheese, sea urchin cream and seabream carpaccio.

In the glasses, the elegant cocktails, decorated with fresh fruits and herbs are brillantly harmonious. Not too bitter, not too sweets, they are perfectly balanced. The Ramatuelle mixes Lillet and champagne with Atopia, lemon liqueur, like a gin, but alcohol-free. A sweet, fruity and fresh mix. As for the Cap-Ferret, the strength of cognac is softened by rosé and strawberry juice.

On the plates, lots of fishes but not only. The mackerel rillettes, a rather simple-looking recipe, are perfectly seasoned to make it an exquisite dish. The seabream carpaccio is very fresh and parfectly seasoned too. And the half-cooked longfin tuna with myrtle is as incredible as the previous dishes.

As for the turf part, in the small gyros served lukewarm, the lamb is very tasty, not too strong. As for the black pig ham, it tastes incredible, so do the tomato toasts served as sides. The tomato is baked, candied, and very-well worked, for a result as incredible as the rest.

For dinner, enjoy the squid with smoked paprika, licorice lobster and aged prime rib of beef, as well as praline pecan churros and the peach, apricot and thyme tarte tatin.
