Turkeys, capons and other fatted chickens… As many poultries will stand on festive tables for the Holidays at home or at the restaurant. And brasserie Gallopin is no exception since the place provides a nice beast with festive flavors from November 18 to December 31, 2019. A menu inviting foodies and gourmets to discover a fantastic fatted chicken from Arnaud Tauzin’s.
So, for the Holiday Season at Gallopin, the 130-day fatted chicken is cooked with champagne steam. Cooking enabling the poultry to get “clear and juicy flesh with very fine flavors”. The latter is served uncut at the table and cut in the room and served along with mixed vegetables. To perfect the tasting, cover it with a light sauce based on chicken stock, white wine and champagne.
A fatted chicken, we’ve had the privilege to taste. And beyond the softness of the flesh, it’s truly the cooking that makes this festive meal definitely flavorful. A wonderful poultry baked in a baeckeoffe, a dish from Eastern France, that is hermetically closed – traditionally with dough – which makes it tender and delicious. A dish of a rare fineness served with crunchy vegetables and a very creamy supreme sauce!
Note that if you come and enjoy this fatted chicken at Gallopin, make the best of it to try as a starter the Oreiller de la Belle Aurore which is basically a traditional pâté en croute that is absolutely delicious and available to order (and to take away) and go for some dessert, such as the Baked Alaska flambéed with raspberry brandy.
