At Eats Thyme, chef Carla Rebeiz delights the Halles district with her colorful and (very) generous Lebanese cuisine.

Lovers of world cuisine and dishes that awaken the taste buds and the pupils, discover one of the most gourmet and vibrant addresses in the Halles district: the Lebanese restaurant Eats Thyme, headed by the truculent chef Carla Rebeiz .

Just a stone's throw from the Jardin du Palais Royal, the chef dusts off the dust from Levantine cuisine and gives pride of place to herbs, spices and the best of Lebanese gastronomy, twisting and modernizing it just right. Inside, on a cosy banquette, or on the quiet terrace if the weather permits, you can discover what Eats Thyme has in store for you!

On the à la carte menu, the multiplicity of Lebanese specialties is thrilling. Among the House's must-tries are a host of hummus dishes, to discover or rediscover this pillar of Lebanese cuisine from a new angle: Green hummus with arugula (7€), red hummus with peppers (7€), yellow hummus with turmeric (7€), pink hummus with beet and feta (7€; one of our favorites) or even black hummus with black sesame (8€) for the more adventurous, it's a veritable rainbow that takes shape on the table.

Alongside the culinary delights of labné (8€), baba ghannouj (8€), Lebanese tabbouleh (8€), roasted cauliflower (8€) and grilled halloumi (10€), all served generously, we pick out dishes to share with our guests, following the owner's recommendations to the letter. Good pickings! We sample one of the limited-edition dishes available for only a few weeks, a cold dish ofmelting eggplant (10€), miso for the umami touch and tahini yoghurt, which slides right in.

Another great discovery is soujouk et fromage (13€), a lightly spiced beef sausage with cheese and pickles, presented in mann'oushe bread makis, homemade organic Lebanese wheat cakes baked on the spot. Barely enough time to toast with a refreshing homemade lemonade (5€) generously spiked with orange blossom before our dessert arrives at the table, as soon as it's ordered: a mouhalabie (6€), the famous Lebanese pistachio and orange blossom flan, trembling to perfection.

Open all day on weekdays, but also at weekends for a Levantine brunch (28€/30€) that's sure to please, Eats Thyme also offers grocery products selected from small producers and artisans: zaatar, pomegranate molasses, vinegars and thyme infusions, ready to join the shelves in your kitchen!
