After meeting success with Blueberry maki bar and Marcello, the Vaconsin sisters opened Steam Bar in Paris 6th arrondissement. A restaurant influenced by Hong Kong and Tokyo, giving pride of place to steamed food!
We love the night-bar vibe, like a secret and intimate club. The décor has been designed by Gabriel Pistre, and for the place, he was inspired by ancient Hong Kong and the In the Moon for Love picture movie by Wong Kar Wai. All in all, with the bench seats, the louvered shutters and the paper lights, we feel the contemporary Chinese vibe.
As for food, Monsieur Wong manages the kitchen as the dumpling and other Hong-Kong steamed food genius he is, after working for Shangri-La Palace. And perfection is on the plate.
The day we came, we enjoyed a range of beautiful specialties. After having enjoyed a cup of Soba-cha tea (toasted buckwheat), we start the meal with chicken and lemongrass, radish and cilantro spring rolls to dip in two different sauces, one being slightly spicy.
We continue with a nice and fresh sweet potato vermicelli and green papaya salad with carrot and ginger dressing, absolutely delicious.
Then, our favorite, the fantastic assortment of Dim Sum. We love the Black Pearl, a king shrimp, ginger and Thai basil hakao. We fall for the Sui mai with crayfish and truffle, and the Little Hanoi, a Sui mai based on beef, cinnamon, anis and cilantro. Let yourselves be surprised by unexpected mix such as the Etoile Mystérieuse based on eggplant, edamame, fennel, cilantro and yuzu. One thing is sure, you will not find anything like that anywhere else.
Then, enjoy some gyozas! We love the king shrimp, mussel, broccolis, carrot, cilantro and Thai basil version. The duck one a bit less, but there is no accounting for taste.
Then, we have baos! Are you more into Princesse Pei Pei with smoked scarmosa, truffle, comté and mushrooms or Chashu BBQ with Peking pork and homemade barbecue sauce? We are team Pei Pei, of course, we loved this decadent discovery.
And we do say yes to the steamed eggplant with miso and sate, deliciously smooth and spicy as it should be.
Last but not least, are you more into the chef’s nuomici including a surprising raspberry version, or Miss Malaiko, this fluffy sponge cake covered in tasty and sour passion caramel?
