In upper Montmartre, restaurant Sushi Shunei opened at the instigation of César Mourot and Paul Dupuy. After hundreds of trips to Japan in ten years, the two friends faced reality: they cannot find sushiya in Paris providing them with the same emotions they felt in Tokyo or other cities from the archipelago. As a matter of fact, the Parisian sushi is often based on too sweet rice with a sometime too thick slice of fish.
This is how Sushi Shunei was born. In a minimalistic and clean setting, seated across the sushi master, or at a table with friends – a big difference with the genuine Japanese sushiya – Sushi Shunei is a travel-inducing experience with chef Shunei Kimura living in Paris for 40 years. On the menu, nigiri-sushi made to order by the chef according to fishing and seasons, with brill, seabream, king shrimps, mackerel, and even eel.
