Quindici Trattoria, Denny Imbroisi’s latest restaurant at the Novotel Paris Vaugirard Montparnasse

Reopening after undergoing renovations, the Novotel Paris Vaugirard Montparnasse gets a new restaurant, Quindici. To create this trattoria, the hotel called in Denny Imbroisi. The Italian chef has come up with a mouthwatering menu serving Italian classics. Dishes pairing Italian cocktails by Matthias Giroud.

This fall 2021, chef Denny Imbroisi shows up everywhere. After presenting his latest cook book, the cook inaugurated his latest restaurant, the Quindici Trattoria, at the Novotel Paris Vaugirard Montparnasse, on the same side of the street as his IDA restaurant.

At Quindici, Imbroisi serves traditional Italian recipes including pasta and pizza, of course. Fresh ingredients come from France, and even Île-de-France when it comes to vegetables. As for the dry produces, they are imported from Italy.

Imbroisi bets on Transalpine classics and it always works: a very thin gilthead seabream carpaccio with lemon, delicate bluefin tuna just seared, roasted squid… Fish are of a great quality and flawlessly fresh. At the Quindici trattoria, the vitello tonnato is modern: no veal bathing in tuna mayonnaise, but slices of meat drizzled in this tuna sauce, capers and parmesan, the house’s original touch.

Moving on to pasta, Imbroisi serves cheese-stuffed potato gnocchi served with basil pesto, gorgonzola and tomato. The stuffed gnocchi themselves are incredible. As well as ricotta and spinach ravioli, generously stuffed over the rim and improved with grated truffle.

As for pizzas, Quindici menu has six of them including the one with truffle and the Regina Silvia – the chef’s partner’s name, dancer Silvia Notargiacomo. The pizza is actually a Regina with cooked herb ham.

Do you think you still have some room left for dessert? On the menu, the staple tiramisu, the pineapple carpaccio or the fantastic cuore tenero, a very, very smooth chocolate and gianduja cake.

Dishes are paired with cocktails mixed by Matthias Giroud. Recipes are different from those available at the Ilvolo rooftop. As a matter of fact, for the restaurant, the mixologist has come up with Italian recipes, three Negronis prepared in casks, and three Spritzes including a seasonal recipe likely to regularly change.

At Quindici, one can also enjoy very tasty Italian wines, thoroughly selected.
