Chef Ryo Miyazaki (from Saturne) serves French cuisine with Japanese influences, based on the best French produces. He revisits the Omakase, this traditional Japanese menu giving free rein to the chef, in eight courses. This is the occasion for you to discover the range of the best of the chef. But it is up to you, you can also get the izakaya style menu with warm or cold Japanese tapas to share.
The chef uses the chinuki (found in ikejime) technique that consists in emptying the fish of the blood in veins and arteries to make it cure ten days in ice. It gives the fish very smooth flesh.

Seared squid and piquillos mash, chimichurri sauce scented with shiso, black olive crumble.
