Please raise your hand if you have never heard of Olivier Stehly yet. Alright, not a lot of you. We must say the pastry chef has grown into a reference for many sweet-toothed people, especially thanks to several of his flagship creations such as the revisited cheesecake or the famous Toga Pop. But this time, we shall discover the savory menu. So, let us go to La Fabrique à Toga in Bercy Village, Paris 12th arrondissement.
The pastry chef got the excellent idea of creating and serving a new indulging concept, or rather an original culinary experience. In partnership with a cook, oh-so friendly, Olivier Stehly decided to settle an open-plan kitchen in the middle of his factory so you can admire the cook working at the stove, concocting delicious dishes behind the glass.
As for propositions, enjoy a short menu, but effective, featuring carrot soup and cured ham toast, burrata and seasonal vegetables, or chicken curry served with peanuts and wild rice. Created based on the season and the chef’s mood, the menu regularly changes. That lunch, we truly fell in love with the egg dish, comté cheese and spinach, served in tiny casserole. A classic arousing the taste buds from the very first bite on.
While the chef is juggling between the oven and pans in the kitchen, we continue the tasting with delicious lemony cod skewers (perfectly cooked), served with dill cream sauce and duck fat-cooked potatoes, a very hearty and indulging dish.
And if you have a big sweet-tooth, then you cannot finish your meal without having one of Olivier Stehly’s pastries. Head to the sweet counter, at the entrance of the store, where several creations eye at you. Raspberry tart, chocolate éclair, lemon pie, pépite.. We eventually went for the super scrumptious Pecan Pie (sugar dough, caramel, pecan nuts, vanilla mascarpone and hazelnut), the cheesecake and its exotic filling and the chocolate Toga Pop.
Note the lunch menu is different from the evening’s menu. For instance, in the evening, the chef has come up with a salmon tartare and green apple starter. As for mains, enjoy the broccoli and girolle risotto or the bluefin tuna tataki.
Time flies and we lost track of time, we have been in this warm and friendly place for almost two hours and we feel like at home! With this new concept over experimental cuisine, Olivier Stehly adds another asset to his venue in the 12th arrondissement, likely to appeal all regulars and new patrons!
