Salvaje is coming to Paris and awaits you in the 8th arrondissement with its immersive restaurant and bars, where you can enjoy superb Japanese cuisine and crazy cocktails, all in a crazy Douanier Rousseau-style atmosphere with music and shows every evening.

Looking for a restaurant where you can indulge in gourmet Japanese cuisine, all in a crazy atmosphere? Head for Salvaje, the new festive spot and bar that has set up shop in the Hôtel du Collectionneur on rue de Courcelles in the 8th arrondissement.

If you're a traveler, you may already be familiar with Salvaje, the group that's already a hit in countries from Colombia to Guatemala, Miami, Madrid and Barcelona, and soon in Marbella, Milan and London. The concept? To provide a spectacular, festive atmosphere, while offering top-quality cuisine and skilful cocktails. The menu features top-of-the-range Japanese dishes, but with an emphasis on affordability.

Salvaje is decorated by Lázaro Rosa-Violán, who also designed the superb Vesper in Paris. Here, you're plunged into the heart of the jungle, in an atmosphere that's more African than Mayan. At the heart of the restaurant, it's impossible to miss the Rhinoceros, the group's emblem, posing proudly in the center, covered in original feathers that make you want to caress it.

The waves on the ceiling are reminiscent of the savannah, while the ethnic prints and carved wooden armchairs take us on a journey. A warm, subdued atmosphere and a DJ booth ensure a lively evening. Every evening, we put on a show, and short shows brighten up the center of the restaurant, around the Rhinoceros.

But as we're told time and time again, the most important thing at Salvaje is the food. We come here to eat well. In charge of the kitchen is Chef Fermín Azkue. Originally from Venezuela, this well-traveled chef offers refined Japanese cuisine worthy of the great restaurants he has visited, all with a Mediterranean touch. A true devotee of French techniques, the chef marries his know-how with quality products, particularly French ones. Steaming, low-temperature cooking and braising, everything is done to enhance the flavors of the raw ingredients.

At Salvaje, the Sushi Bar is the star. From Spicy Tuna to Salvaje Roll and the famous Rainbow, it's all yours to discover. It's the ideal concept for a table to share. There's also nigiri and sashimi, hosomaki and specialties on Robata, the Japanese barbecue grill you're sure to love. You'll love the divine fish and meats with their amazing smokiness and perfect cooking. Note that lunchtime menus range from €45 to €65.

Salvaje has 3 bars. One on the side of the restaurant and one on the terrace for chilling out in the sun or in the shade.

World-renowned Borja Goikoetxea is in charge of the creative cocktail menu. For Salvaje Paris, the renowned mixologist has imagined a wild menu. Borja Goikoetxea's menu is threefold: French-style aperitifs, classic cocktails and signature cocktails.

Signature cocktails include the Ukiyo (gin, white chocolate, citrus, cream and a blend of flowers and yuzu), perfect for pairing with the Dynamite Roll; the Rino (Japanese gin, umeshu, apple and passion fruit), presented in a replica of the house's trademark golden rhinoceros; and the Ikigai (citrus rum, roasted pineapple, sesame, lulo foam and passion).
