Are you looking for a restaurant to enjoy fine and gourmet Japanese cuisine in a crazy atmosphere? Head to Salvaje – the latest spot and festive bar – within Hôtel du Collectionneur, rue de Courcelles in the 8th arrondissement.
If you travel, you may have already encountered Salvaje, the group thriving already in different countries such as Colombia and Guatemala, or even in cities such as Miami, Madrid and Barcelona and even Marbella, Milan and London soon. The concept? Providing a spectacular and festive atmosphere whilst serving quality cuisine and smart cocktails. On the menu, high-range Japanese dishes but the will to stay affordable.
At Salvaje, decoration is designed by Lázaro Rosa-Violán to whom we already owe the super Vesper in Paris. Here, enjoy the jungle in an African-Mayan atmosphere. In the heart of the restaurant, you cannot miss the Rhinoceros, emblem of the group, proudly standing in the middle, covered in original feathers we want to touch.
The waves of the ceiling remind the savannah whilst the ethnic prints and chairs made of sculpted wood are travel-inducing. Soft and warm atmosphere, DJ booth, it has it all for a great and wild party. Every night, a show is performed in the middle of the restaurant, around the Rhinoceros.
But we were told and we want to repeat it, the most important thing at Salvaje is food. One comes to have a blast. Running the kitchen, chef Fermín Azkue. Coming from Venezuela, the chef travelled a lot and served sophisticated Japanese cuisine worthy of the greatest tables he stopped by, but with a Mediterranean twist. As a genuine passionate of French techniques, the chef mixes his know-how with quality French produces. Steamed, cooked at low temperature before being braised and uplifted with raw material flavors.
At Salvaje, the Sushi Bar is the star. From the Spicy Tuna to the Salvaje Roll to the famous Rainbow, enjoy lots of discoveries. This is the ideal concept for a sharing offer. But you can also indulge yourselves to nigiris and sashimis, hosomakis and Robata specialties – aka the Japanese grill BBQ you will love. Get divine fishes and meats with amazing smells and perfectly cooked. As for lunch, menus are available from €45 to €65.
3 bars are available at Salvaje. On the side, within the restaurant and on the terrace to chill in the sun or the greenery.
At the helm, world-famous Borja Goikoetxea signs the list of the house’s creative cocktails. For Salvaje Paris, the famous mixologist came up with a wild list. Borja Goikoetxea’s creations play on three levels: French style aperitives, classic cocktails and signature cocktails.
Among the signature cocktails stand out the Ukiyo (gin, white chocolate, citrus fruits, cream and mix of flowers and yuzu), perfect to pair with the Dynamite Roll; the Rhino (Japanese gin, umeshu, apple and passion fruit), served in a replica of the golden rhinoceros – the house’s trademark – or the Ikigai (citrusy rum, roasted pineapple, sesame, lulo mousse and passion fruit).
Hand in hand with chef Fermín Azkue, Borja Goikoetxea works cocktails to they can match the chef’s dishes.
