As most legendary houses, Dalloyau decided to think hard to create pastries worthy of the best Valentine’s Day!
This year, Maison Dalloyau has been inspired by red, the color of love and chose to create three delicacies in limited edition to enjoy with your loved one from February 8 to 14, 2019.
An entremets topped with a hot-air balloon flavored with raspberry like a love heart flying away. The light sour mousse plays on the pairing with raspberry, redcurrant and geranium. You continue the tasting with a crispy base made of praline rose mixed to a smooth dacquoise enhanced with praline chunks.
Composition: Praline rose crisp, dacquoise biscuit with praline rose chunks, raspberry, redcurrant and geranium compote, raspberry, redcurrant and geranium mousse.
Topping a shortbread, the fruity taste of blackberry and raspberry blends with the softness of bourbon vanilla from Madagascar and the freshness of ginger. A raspberry "coeur montgolfière" [Hot-air balloon heart] chocolate slab embellished this delicious tart.
Composition: shortbread, ginger cream, blackberry compote, fresh raspberries
