Beech-smoked salmon, sour cream and lukewarm blinis
Buttery snail gratin, garlic and parsley, candied tomatoes
Delicate winter squash soup, potato gnocchi with nutmeg and chestnut

Lobster and morels pudding, lemon-flavored whipped butter
Loire pike-perch roasted with pepper and fennel, red wine sauce
Feathered game pie and foie gras, mixed salad
Hind noisette with juniper berries, Grand Veneur sauce, celeriac mousseline
Pan-fried beef fillet with Port jus, truffled mashed potatoes
Aged Brie de Meaux with walnuts, mesclun salad mix
Vanilla mille-feuille, salted-butter caramel sauce

Grand cru chocolate and hazelnut tart, coffee ice cream
