Famous pastry chef and chocolatier Gilles Marchal opens a new boutique in the Montmartre district, called the Compagnie Générale de Biscuiterie. Gilles Marchal wanted these treats to pay tribute to the Montmartre village and its mills from former times. The puff pastry cookies are made with a rye flour, to honor the Moulin de la Galette, in the same place that it was when it was in business in the 18th century. All of the cookies also honor the era, by reminding us of the famous cancan dancers, with their layered skirts and their fun names, bringing these girls back to life.
The cookies are prepared and baked several times per day in the atelier where visitors can observe the artisan bakers and buy them directly (after being tempted by the delicious aroma of the treats straight from the oven!)
The price for a bag of cookies starts at 6,50 euros.
