Everyone has their own inspirations for Christmas. According to World’s Pastry Champion and Meilleur Ouvrier de France Angelo Musa and Hôtel Plaza Athénée pastry chef Alexandre Dufeu, Alsace and its spices, as well as gifts underneath the Christmas tree are the reflection of the Holidays. And we agree!
And this original creation 2020 is breathtaking. Laying on a chocolate base, 6 gifts underneath the chocolate Christmas tree. These gifts are individual slices of the yule log ceated by the chefs. Therefore, no problem when slicing up the cake, everyone will get a mouthwatering present.
And perhaps are you wondering about the surprise? Well, this cake unveils layers of flavors and textures. Under a milk chocolate cover, we discover almond-gingerbread crunch topped with gingerbread cake enhanced with a layer of marmelade and Christmas crémeux. The whole is covered in gingerbread mousse. And we must say that we are traveling to Alsace for sure.
Moving on to the tree, its purpose is not only decorative. It can be eaten. The branches of the tree have been made one by one with Venezuelan dark chocolate. It will perfectly pair a cup of coffee at the end of the meal. With the 6 precious gifts, you also get 3 lovely "Gustave" made of red marzipan, aka Hotel Plaza Athénée's iconic bear.
