This year again, Four Seasons Hotel George V yule logs 2020 by chef Michael Bartocetti is one of the most original yule logs 2020 in Paris. To book for Christmas eve dinner, it will undoubtedly cause a sensation on your table and in the mouth.
For the Holidays, the chef has been inspired by hazelnut, specifically Cazette, the famous toasted hazelnut the chef loves so much for its intense scent and its French origin.
Therefore, the yule log looks like the cazette, with a nod to the quilling decorations, a technique the chef loved on the Lorraine markets. As a matter of facts, in this revisited Cazette, thin layers remind us of the rolled paper technique taught to children to create airy snow flakes to decorate the Christmas tree with.
This Cazette is actually a box made of 66% Caribbean dark chocolate like a tasty mendiant. Once the lid is removed, you discover the entremets.
The entremets, covered in a delicate dulce de leche glazing, is based on cold-brewed coffee mousse, very subtle. It enables the coffee to unveils aroma without taking the entire cake. It also includes some coffee and Vietnamese green cardamom crémeux with lemony hints for something very fresh in the mouth. Add some cazette flower and coffee bean praline. For the crunch, you get to discover some cazette and fleur de sel crunch and tasty gingerbread to remind us of the Christmas atmosphere.
It is undoubtedly one of our favorite logs this year. The flavors marvelously match and we feel like it is Christmas for real. And there is nothing more self-indulging than finishing the meal with some mendiant chocolate along a cup of coffee, is it?
