Chef Michael Bartocetti has come up with another graphic Yule log for Christmas 2023. We're off to the Four Seasons Hotel George V Paris to discover his curvaceous gourmet creation, which resembles a fir branch and smells of chocolate and vanilla.

Once again this year, Chef Michael Bartocetti 's 2023 Yule log from the Four Seasons Hotel George V is one of the finest Yule logs in Paris. Set aside for Christmas Eve, it's sure to create a sensation both on the table and in the mouth.

Imagined by talented pastry chef Michael Bartocetti, this creation is both delicate and regressive. We're seduced by the beauty of its curves and graphics, inspired by the slender lines of a fir branch. This homage to Michael Bartocetti's childhood evokes his grandmother's Christmas table. Every year, she would place a branch from the family fir at its center, creating a warm, traditional atmosphere that the chef treasures.

It's not just a log, it's a work of art. It's delicately adorned with fine sprigs of 68% Colombian dark chocolate from Nicolas Berger. It also features tasty praline bonbons and a dark chocolate ganache in the shape of pine cones. But the magic doesn't stop there. At its heart lies a light, creamy mousse with cocoa pod mucilage, for an explosion of fruity, tangy flavors that takes the palate by surprise.

To sublimate this log:

  • A creamy 70% Papua New Guinea dark chocolate that brings out woody, leathery flavors, enhanced by a lightly smoked toasted bread praline.
  • A cookie with roasted Madagascar and Tahitian vanilla, married to the texture of a toasted bread crunch with toasted coffee beans.

The price of this marvel? 135 euros, for a log designed to delight 8 guests. And for those who want to be the first to discover this sweet treat, from December 1, a dessert version will be available as part of the Galerie Christmas tea-time.

In short, a creation to delight chocolate and vanilla lovers and those curious about mucilage. This exceptional Bûche de Noël is a real invitation to gourmandise and nostalgia, for a memorableChristmas . Already on pre-order, this log will be available from December 21 until the end of the New Year festivities.
