The aesthetics of this log are a true tribute to nature. Like a snowdrop emerging from the snow, it faithfully evokes the fragile elegance of this winter flower. Three large petals of crunchy chocolate open delicately, revealing a heart reminiscent of the traditional Christmas tree.

The flavors are a gustatory voyage. Hazelnuts, in a variety of forms, dominate this creation. On a crunchy base of roasted hazelnut and black cardamom, we savor a vanilla-hazelnut marble, a Creusois cookie and a hazelnut cream with smoky notes. Finally, a stracciatella yoghurt cream with Peruvian milk chocolate and a smoked praline with fleur de sel perfect this log. Not forgetting the tangy black cardamom reduction for a final note that awakens the taste buds.

The blend, though varied, proves harmonious. We love the different textures, the divine praline and the nutty taste awakened by the hint of cardamom.

As for price and availability, the "Perce-Neige" log is priced at 120€ and is designed for 6 gourmands. Pre-orders start on Friday December 1, with a minimum lead time of 72 hours. Pick-ups can be made at Le Lobby restaurant, 19 avenue Kléber, between December 19 and 31, 2023.
