For his first Christmas at the palace, the pastry chef has created a magical creation yule log named "Le Jardin sous la Neige" [The Garden in the Snow].
Why this name? Simply for the design gives pride of place to French formal gardens like the one hidden in the palace. It is also a nod to botanic, the passion of the previous master of the place, Prince Roland Bonaparte.
Maxence Barbot has been inspired by gardens and has created one he covered in winter white for the Holidays.
What about flavors? Picture this, chocolate cookie covered in layers of good food: chocolate crunch topped with delicate Altapaz 73% chocolate crémeux, and airy milk mousse based on cocoa nib from Guatemala. Add to this some smooth vanilla caramel to fill it all, mixing textures. And delicate candy spheres enhance the garden and here we are in heaven (or perhaps the Garden of Eden).
