“L’écorce” [the Bark]: this is the name of the sumptuous edition 2017 yule log created by two-starred chef Jérôme Banctel and his pastry chef Marc Lecomte for La Réserve Hôtel Paris.

For the Holidays 2017La Réserve Hôtel Paris offers an incredible and trompe l’oeil yule log.

Imagine by two-starred chef Jérôme Banctel and his pastry chef Marc Lecomte, this creation is called “L’Ecorce” [The Bark] and is inspired by the famous chestnut trees Avenue Gabriel as well as the logs blazing in the many fireplaces of the hotel.

In terms of flavors, the bark is made from Criollo chocolate artistically sculpted and the heart of the log is a sublime golden garnishing where a light vanilla mousse, candied chestnut silvers, moist chestnut biscuit and subtle caramelized pear and wild cherry syrup perfectly blend.

For the record, this yule log 2017 is available from December 15 to 24, 2017 in limited edition.
