Everyone has their own inspirations for Christmas. For World’s Pastry Champion and Meilleur Ouvrier de France Angelo Musa and Hôtel Plaza Athénée pastry chef Alexandre Dufeu, it’s all about a trompe-l’oeil creation unveiling fluted and flaky scale with blunt edges.
To make this yule log almost true to life, each creation is covered with a unique bark wince they are made with 6 to 8 different colored cocoa butters!
As for flavors, the pâtissiers worked even harder and bet on a fine dark chocolate layer to coat some milk chocolate mousse topping some citrus fruit marmalade with orange, buddha’s hand, lemon and lime, and some dark chocolate cream and the base is made of chocolate cake.
To give even more texture to this “Sous l’écorce” yule log, chefs added some crunchy chocolate mix.
