For some people, Christmas is all about surprises, gifts and little trains. For Nicolas Paciello who dived into his childhood memories to get into the Christmas spirit, it’s all about pine scents. If some went for lovely pine trees, Nicolas Paciello decided to represent a trompe l’oeil Cone with the sweet flavors of pine tree honey.
As a matter of fact, for this year’s yule log, both chefs selected a pine tree honey standing out thanks to resin aromas and balsamic taste. A bold but successful choice since we really feel in the woods when we come to taste it.
Moving on to the process, note that this yule log is hand-sculpted. Under a 70% Jamay dark chocolate shell, we find a creamy milk mousse scented with pine tree honey. Honey sweet malted flavor perfectly pairs the soft salt flower cake.
In other words, here’s a beautiful and tasty yule log combining beauty, delight and finesse.
The “Cône” yule log by Prince de Galles is a limited edition by pastry chef Nicolas Paciello. Available for sale from December 17 and to be enjoyed by the slice at Bar Les Heures from December 10.
