When haute patisserie meets contemporary art, it gives an ultra-chic and very mouthwatering collaboration. On one side, pastry chef François Daubinet, on the other side, plastic artist Hopare. Together, the two friends have created an exclusive collaboration to discover on November 5 to 8.
Hopare fans, the pastry chef met him for one of his exhibitions and their common will to break the codes and go over borders sounded like an evidence. François Daubinet and Hopare have worked together to come up with an incredible work mixing both of their universes: food and design.
Together, they created Fragment, a limited-edition entremets resulting from a performance mixing gastronomy and work of art. Like a fragment from one of Hopare’s urban works, this entremets has been designed like a sculpture: like a piece of raw material, a piece of rock, carved in chocolate to create an exceptional piece.
The base of the entremets is made of peanut praline crunch and moist roasted peanut cake. Its heart unveils creamy caramel holding vanilla and Tonka bean crème brûlée. Smooth 65% chocolate mousse covers it all.
And to make sure the object remains after tasting, you are invited to save the box the entremets is set, numbered and printed, an original work by Hopare.
This Fragments entremets by François Daubinet x Hopare is to be found from November 5 to 8, 2020 at pop-up store 98, rue de Turenne in Paris 3rd arrondissement. Allow €125 the entremets serving 6 foodies.
