Shangri-La Hotel Paris pastry chef Michaël Bartocetti regularly renews his afternoon tea with seasonal fruits as well as a 100% vegan afternoon break. Yes, the chef is now known everywhere in Paris to create pure delights without using eggs or cow’s milk, a genuine exploit to taste without any hesitation!
In no time, chef Michaël Bartocetti is now famous in the gastronomic Paris with vegan pastries now offered at the Bar Botaniste lounge, palace Shangri-La discreet and cozy corner.
Open to all, every day, from 3 p.m. to 6 p.m. for the afternoon tea, the bar offers us a true relaxing and gourmet moment.
And as the house specialty, the teatime is entirely vegan, that is to say that the 3 pastries, the 6 biscuits and scones of the trail have no animal proteins or fats that are though vital to French pastry.
To be a success, the pastry chef focuses on fruits and exceptional products he then works as naturally as possible to not alter it. For his pastries, Michaël Bartocetti uses plant-based proteins as well as refined sugar substitutes such as coconut sugar, maple syrup and panela… we’re blown away!
Hazelnut-yuzy tartlet, poached pineapple and cilantro mousse on a shortbread, chocolate-blackberry entremets are among the chef’s creations followed by the revisited and super light scones and biscuits; Figolu®, gavottes, florentins, coconut financiers and event pine kernels tartlets are to die for and force us to take a second (or third) cup of tea (or coffee).
Yes, know that Shangri-La offers some exceptional selection fascinating tea connoisseurs, even the most demanding ones. Between the original Genmaicha (Japanese green tea), with a smooth and pleasing taste, blending the fresh green tea herb with the hazelnut flavor of puff pastry, the SILVER TIPS, a very delicate white tea with flower twists, fresh herb and a lovely finale touch of flower honey and the Grand Cru Ran Watte (black tea from Sri Lanka High altitude, gardens of the 2000-m high Nuwara Eliya region), we don’t know where to start!
You’ll have to pay €45/person or €80 for 2 to share a gourmet moment in a prestigious venue, the whole without feeling guilty! Go with your eyes closed, pastries are very light, full of flavors with the chef’s signature sophistication likely to make you succumb!
Since this year, the palace also offers an exceptional afternoon break in the weekend within the restaurant La Bauhinia. If you’re into sweet things, go stuff your face with this outstanding all-you-can-eat buffet.
