Yule log 2018 by Pablo Gicquel for Hôtel de Crillon, Paris

For Christmas 2018, Hôtel de Crillon came up with a Christmas yule log based on particular flavors: almonds-blueberries-blackcurrant, to be discovered from December 1, 2018 to January 6, 2019!

Hôtel de Crillon yule log 2018 is very sober, shaped like a spotless white pillar. If we can think Hôtel de Crillon yule log is formal, it’s a really beautiful nod to the palace architecture since it takes over the pillar featured in the Suite Marie-Antoinette where the Queen used to take piano lessons!

With his creation, chef Pablo Gicquel gives us no clues about the flavors of the yule log that is yet so special. You have to cut it into slices to discover a blueberry and blackcurrant jam hidden inside a Lanquedoc almond mousse.

Subtle, the flavors remain consensual: we taste the sweet flavor of almonds, but the blueberry and blackcurrant jam may lack some punch to our taste, perhaps because it has been wood-fire smoked! The yule log is yet very delicious.

To reassure you in your choice, Hôtel de Crillon offers you to taste the yule log from December 1, 2018 in the Jardin d’Hiver along with a hot drink.
