Hotel de Crillon unveils a graphic, regressive Yule Log for Christmas 2023 in Paris

At the Hôtel de Crillon, pastry chef Matthieu Carlin and designer Victoria Wilmotte unveil an original Yule log with a sleek, elegant design and flavors that mark a delicious return to childhood for Christmas 2023!

The festive season is upon us. Paris sparkles with a thousand lights, enchanting young and old alike during this enchanted period synonymous with conviviality, love and sharing. Christmas means Christmas, and Christmas means gourmet delights! On our festive tables, an unmissable star closes these sweet moments spent with loved ones and imposes itself as a final bouquet: the Yule log.

At theHôtel de Crillon, the legendary Parisian palace on Place de la Concorde, you can discover an original reinterpretation of the Yule log. This year, the palace's pastry chef, Matthieu Carlin, has teamed up with designer Victoria Wilmotte to unveil a modern, graphic and elegant creation with a childhood flavour.

The log is reminiscent of an ultra-design snow-capped mountain range, and we also salute its practicality when it comes to cutting. While the visuals honor Victoria Wilmotte's signature creations, Matthieu Carlin' s regressive touch is fully reflected in the flavors of this contemporary log. Indeed, every year, the pastry chef at the Hôtel de Crillon mischievously unveils recipes that speak directly to our memories, while at the same time arousing a certain amount of emotion and offering creations that are light, unsweetened and respectful of natural flavors. Ideal to round off a hearty banquet.

This year, petit-suisse takes pride of place with an airy, slightly tangy mousse. This fresh cheese, which has often accompanied us on our little tea parties, is married here to Tahitian vanilla, which adds that famous sweet, comforting note. The base is a Joconde cookie with a layer of creamy caramel that emphasizes the regressive side without overpowering the more delicate flavors that make up the log, with the added bonus of a puffed rice crisp for a crunchy, fun touch that could well melt young and old alike.

And that's just one of Matthieu Carlin' s tricks of the trade, offering us recipes from Christmas to Christmas that bring ages and generations together, helping us to focus on what's most important: love and sharing. We see ourselves recounting the memories of our tender years, and forging even more beautiful ones.

But be warned: this is a limited-edition creation! Priced at 118 euros for an 8-person format, it is available for pre-order from November 23, 2023 on click&collet and on the hotel's website, for collection between December 18, 2023 and January 2, 2024 at the Hôtel de Crillon's Pâtisserie Butterfly (reservation 24 hours in advance).
