This is this Christmas star at the Tour d’Argent. The lemon/praline yule log is a fantastic pairing of flavors between indulging hazelnut praline and lemon, but very well balanced: topping lemon cake, a layer of crunchy praline. And on top of it, creamy lemon core, covered in mind-blowing praline mousse. This yule log is morish and likely to delight many people.
Our favorite creation. The chocolate/orange yule log has a nice sour taste that arouse the senses. Based on Lautrec cake, this yule log shows off intense dark chocolate mousse with marmalade and orange insert. A battle of flavors delivering new sensations with every bite.
Third wonderful creation that is also worth it, the pear/vanilla/caramel yule log is very comforting with softness and roundness, delivered by pears selected by Yannick Franques. A pear/vanilla confit insert covered in caramel mousse, lying on almond cake and crunch, this yule log is likely to delight (grown-up) children.
