This year, the committed and sustainable chocolate maker – who is willing to correctly name the exploitations – offers a creation based on mucilage – the famous white skin wrapping the cocoa bean inside the pod. Dried and fermented, this flesh has a surprising sour taste, reminding us of some citrus fruits, pear and even lychee.
For the yule log, the chef used a unique mucilage coming from an artisanal Brazilian cocoa harvest from Ilheus. It has been simply frozen after being removed from the pod. This is an extremely rare product, free from additive, that is used for this Holiday creation collection.
This Bûche de Noël Mucilage yule log is based on chocolate mousse topped with cocoa nib crunch encasing a mucilage and cocoa nib jelly. The whole is spread on chocolate cake. The ideal yule log for all genuine chocolate lovers!
As for chocolates, you will love the animals from the savanna. Here, the giraffe fills the sleigh with pods and the elephant is making sure the cocoa ferments well… It has it all to add very lovely treats underneath the Christmas tree!
These creation pieces are made by hand, based on cocoa from Cameroon. The white chocolate is a great first: it has been made with unfiltered cocoa butter, non-deodorized delivering an authentic strong taste. The pops of colors are the result of mixing white chocolate and fruit powder such as raspberry to get the color red.
