This year, Maison Dalloyau offers a magical Christmas with a yule log and macarons to share with your family on Christmas eve dinner 2018!
Maison Dalloyau pastry chef Jérémy Del Val came up with a hearty and delicious yule log likely to delight children and make the adults fall back to childhood.
First, visually, with its incredible chocolate dome set on the yule log and then with its flavors. When we cut the yule log, we discover multiple and very regular layers.
The work is so complex the chef had to draw it up: a base made of a crispy toasted rice and puffed quinoa biscuit, a hazelnut biscuit, praline-Piedmont hazelnuts-yuzu cream, hazelnut dacquoise cake, light hazelnut-vanilla from Tahiti mousse, the whole coated in 43% Madagascar milk chocolate and almonds!
Yes, he did it! Jérémy Del Val mischievously included yuzu to hazelnut-praline combo and it works very well with gourmet eaters, but it can also sicken some people. He even dared toasted rice and puffed quinoa. And the combo works, this yule log is very original.
For skeptics, or to figure out your meal around this yule log, the chef offers individual logs, perfect to make sure you won’t get mistaken on D-Day.
Please note that on the pictures, the dome is hanging from a structure, it was so only for the photo shoot and the chef told us that he won’t move to recreate it at home (we tried).
