Beautiful, graphic and flavorful! The yule log 2019 by pastry chef Pascal Hainigue will likely have many fans.
Called Le Stère Chocolaté [The Chocolatey Stere], this yule log enjoys a clean design in 3 dimensions, unveiling a beautiful assembling work to make it look like a true stere (you know what I’m talking about, this geometrical way of stacking and measuring firewood!).
With this yule log, Pascal Hainigue chose to pay tribute to the work of those who hand-make forests and show his attachment to nature and the work of the earth while respecting the elements and the seasons.
Moving on to flavors, the yule log is once again all about the forest and reaching a certain naturality with a soft hazelnut cake, crispy buckwheat and crêpes dentelles mix, a heart made of smooth vanilla and fir tree cream and Macaé chocolate mousse, the whole hidden under a crunchy chocolate bark.
Note that this beautiful nature yule log is available to order in limited edition starting December 2, 2019 for €90 (serving 6 to 8). You can also discover the Burgundy yule log flavors by the plate at the new Bar Le Charles and Restaurant Le Baudelaire for €12 the slice and from December 16 to 28, 2019.
