Once again this year, the pastry chef-baker has created an inverted galette des rois ! To achieve this, Benoit Castel has used the puff pastry method, in which the dough is encased in PDO butter rather than the butter in the dough. The result is an even more successful puff pastry.
The result is a delicious Galette des Rois 2024 , with a flakier, crisper and more caramelized puff than usual. As for the frangipane, it boasts a taste of almond cream and hints of Madagascar vanilla.
Another delicacy of choice: the brioche crown, richly garnished with exquisite candied fruit. This light brioche, delicately flavored with orange blossom and sprinkled with sugar pearls, represents a pillar of the baking tradition, a specialty that Benoît Castel executes with mastery. Hidden inside is the artisan's emblematic bean, a distinctive little cookie that marks his work.
Individual galettes cost €4.50. Larger versions for 4 to 6 people are priced at 29€, while those for 6 to 8 people are priced at 38€. The Brioche des Rois is priced at 21€.
