La Scène’s 2022 Epiphany Cake comes from a genuine revelation when meeting Roland Feuillas – founded of Maîtres de mon Moulin in Cucugnan. Genuine ode to bread and ancient flours, this Epiphany Cake is very surprising.
This year, Stéphanie Le Quellec and Pierre Chirac offer us a very personal version of the Epiphany Cake based not on puff pastry but kouign-amann – made of wheat.
It is based on creamy seed frangipane: flax, poppy seed, sesame, sunflower, caramelized wheat bran, and a core made of pastry cream and toasted bread-infused milk. The touch of creaminess and scrumptiousness reminds us of the nice taste of toasted bread.
To take the experience up a notch, the Epiphany Cake is then delicately coated in caramelized wheat brans, in order to create a delicious sandy crust. The top is sprinkled with caramelized bread crumb.
Surprising and atypical but very delicious, this cake will leave no one untouched.
