The Lunar New Year 2022 lands on February 1, and for two weeks. As it happens every year, this is the occasion to attend magnificent parades in the 13th arrondissement, and enjoy Asian specialties of all kinds. And there is nothing quite like the Brigade du Tigre restaurant to celebrate the arrival of the… year of the tiger!
To kick festivities off, Adrien Ferrand and Galien Emery have come up with two festive nights around suckling pig, this popular dish found in all Asian cuisines.
Therefore, on Thursdays February 3 and 10, 2022, the Brigade du Tigre offers foodies to enjoy a whole roasted suckling pig, brushed in spices, honey and soy. The outcome? The skin is delicious, and the meat as juicy as can be, and for even more scrumptiousness, some spicy stuffing completes it with dark mushrooms, a blend of 5 Chinese spices, ginger, chili pepper and garlic.
Once at the table, the suckling pig is sliced and served with baos and homemade pickles: shiitake, black mushrooms, daikon and cucumber. Enjoy it the Asian style: stuff the bao with the filling, pickles and fresh herbs, then splash it with some gray. To eat with your fingers, of course!
The next days, on February 4 and 11, enjoy the New Year 2022 street-food style with a bao sandwich to enjoy on the go and collect at the Brigade du Tigre! In a rectangle bao, enjoy pulled suckling pig, spicy stuffing, pickled mushrooms, shallot and cucumber, fresh herbs, cilantro and Thai basil. The whole is seasoned with spicy yogurt sauce, and sate barbecue sauce.
