The rooftop restaurant-bar at the Mama Shelter La Défense and its menu by Pierre Chomet

Fancy a restaurant on the top floor of a new hotel, with a view over theinfinity of Paris? Then we're off to the Mama Shelter La Défense , which has just opened its doors on the edge of the famous Paris business district. Climb to the 14th floor - don't panic, there's an elevator! - to discover one of the hotel's three restaurants, unquestionably the most impressive.

With its colourful, ethnic decor, large bay windows overlooking the rooftops of Paris, a grand piano that promises lively musical evenings on weekends, and an imposing central bar, the top-floor restaurant is a sight to behold.

But the best view is undoubtedly from the window, with the capital' s most majestic sites and monuments in full view: the Eiffel Tower, of course, but also theArc de Triomphe, the Fondation Louis Vuitton, the Tour Montparnasse, the Sacré Coeur, and at our feet, the Bois de Boulogne and the sleeping city.

For its menu, Mama Shelter has turned to a young chef who was even spotted on theTop Chef 2021 TV show, Pierre Chomet, who has drawn inspiration from his travels around the world to create a local menu tinged with Asian colors, flavors and techniques, just as he did during his appearance on the famous cooking show.

This is not the first time that Mama Shelter has called on a renowned chef to imagine the menus offered in its hotels. Alain Senderens, Jérôme Banctel, Guy Savoy and Jean-Edern Hurstel have all done so in the past. Today, Pierre Chomet, who has worked in the kitchens of Le Bristol and Joël Robuchon's Atelier in London and Bangkok, is in charge of this gourmet task!

To discover, for example, on the panoramic restaurant's menu, the very fresh and attractively dressed sea bass carpaccio, pomegranate, lemon balm and combava (14€) and tuna tataki, pink radish, edemame, ponzu sauce (14€) as starters; the crispy octopus (22€) on a very generous bed of coconut beans, chorizo, parsley; or the very tender supreme of farmhouse poultry from the Landes (23€), snow peas, spinach, wasabi. These are well-executed dishes, effectively tinged with Japanese flavors.

Once dinner is over, we're off to discover an even more impressive space that invites the wildest parties: a small rooftop-patio sheltered from the wind, with comfortable sofas, colorful cushions and an incredible view of Paris! The perfect place to sip the restaurant-bar's excellent cocktails with friends.
