The former chef of ** Passage 53 is back in the news with the opening of Blanc by Shinichi Sato next autumn.

Shinichi Sato has been keeping a low profile for the past 4 years. After arriving in France in 2000 at the age of 23, the Japanese chef from Hokkaido spent two years working with Pascal Barbot at L'Astrance - his first culinary experience - before taking the helm at Passage 53, a restaurant awarded 2 Michelin stars, where he imposed his carte blanche.

The man who was recognized as the first Japanese chef to win these two coveted macaroons from the French guide is preparing to open his own restaurant in Paris's chic 16th arrondissement, just a few numbers from his former stronghold, Astrance.

In collaboration with the architectural firm Kengo Kuma and Associates, the 46-year-old chef has designed this gourmet restaurant from the ground up, imagining every detail with the utmost attention to detail, from the menu to the background music and tableware.

Shinichi Sato intends to make a name for himself again with this new address, but you'll have to be patient a little longer. See you in September!
