If you're a chocolate addict, unable to stop, don't bother. This chocolate factory could well be fatal to you. Born fromAlain Ducasse's long thoughtful desire to create his own chocolate, the first Parisian Manufacture was born and set up on rue de la Roquette in Paris.
What makes the major asset of this chocolate factory, apart from the fact that it is created by a three starred chef, is the fact that the chocolate is made by hand, from the bean to the candy. Equipped with old machines (only big industrial machines are made nowadays), that had to be found far away and adapted for a small production, the factory takes care of the conching of the beans.
Does this have a real impact on the taste of the chocolate? It's up to you to test and tell us. What is certain is that the Manufacture, entrusted to the hands of Nicolas Berger, Alain Ducasse's former executive pastry chef, can pride itself on controlling the production of the chocolate in all its stages. The goal is to sublimate the taste of cocoa beans of various origins through custom-made adjustments.
At a time when industrial production is under threat, the return to home-made products, where one selects one's own basic ingredients with great qualities without borrowing from intermediaries, has a lot to offer. In addition to the chocolate, the factory also makes its own praline from the fruit.
The Manufacture supplies the various Ducasse restaurants, but a pretty adjoining store also awaits chocolate lovers. Under a pretty glass roof subtly decorated with old furniture from the Banque de France, you will discover a central showcase under a bell, presenting the pralines and ganaches in different flavors. The bookcases, along the wall, present you the shelves with a retro look. Bars of different origins, sometimes unavailable elsewhere, with different cocoa contents, filled or not, chocolate candies, orangettes, chocolate almonds, there is enough to feed your compulsions.
Of course, with such high quality products, it's hard to get away without making your wallet scream (especially if you have trouble stopping). Note for example that the 75g bar will cost you between 6€ and 10€ depending on the type and the origin.
