Karamel Paris pastry chef Nicolas Haelewyn invites us to discover its new Christmas creation thought up for these Holidays 2018.
For the third year in a row, the pastry chef has created a yule log around caramel but not only… This year, Maison Karamel invites us to experience a unique gustatory journey around Riviera lemon.
Both light and tasty, this creation offers a sumptuous décor. Under its vibrant and sunny color, this yule log unveils a crispy dacquoise cake with hazelnuts and Karamel candy mixed to a roll hazelnut and lemon cake.
For even more free, this creation is made of Riviera lemons hidden in the heart of a smooth cream sprinkled with crispy meringue chunks with lemon zests and a raw Piedmont hazelnut praline.
And to enhance the whole, the pastry chef added some caviar lemon seeds! Topped with small cubes of pure lemon juice and crispy hazelnuts, this yule log will likely delight caramel and citrus fruits lovers!
