Here is the creation 2020 by talented pastry chef Quentin Lechat for Jardin Privé, Novotel Les Halles tearoom. Mon Beau Sapin, so is the name of the 3rd yule log to order (in limited edition) and take away.

This year, he teamed up with Weiss chocolate factory and signs two yule logs. The chef does not provide us with one but two flavors you can mix or not.

The first part of Mon Beau Sapin unveils a chocolate yule log. Perfect for chocolate lovers - and you are many. It is based on cocoa sponge cake, chocolate crémeux, chocolate mousse, rosemary fir tree honey. Chocolate of course, but with an original twist to end your meal nicely.

The second half of the yule log is just as indulging. It is based on buckwheat almond and honey cake, milk chocolate crémeux, mandarin and fir tree honey jelly and walnut praline mousse twisted with orange zests. It will undoubtedly surprise and delight you. Without extra sugar, the soft mandarin jelly brings a fresh touch to the yule log and offsets the bitterness of the walnut praline, so good.

The yule log is available for 6-7 foodies. In limited edition, it is available for booking from November 25 to December 18, 2020 for €55 (reservations.quentinlechat@gmail.com to get the booking form). It is then available to pick-up from December 21 to 26, 2020.
