Every Holidays, they are more and more beautiful and each more delicious than the other. I’m obviously speaking about the famous yule logs proudly sitting on our tables for the Holidays!
If some people may play the safety card with authentic flavors, other let themselves be carried by their imagination and give birth to incredible creations. It’s what Maison Hugo & Victor pastry chef Hugues Pouget has done by designing the Bûche K.
Created in partnership with Maison Kaviari, this original creation is nestled in a caviar box.
Inside, the pastry chef has bet on a (flourless) dacquoise cake with yellow lemon zests delicately topped by Konatsu lemon cream (a citrus fruit originally coming from Japan) and a light Konatsu cream, as well as diced pineapple and Konatsu jelly.
To top it all, this yule log hides lemony tapioca pearls and lime zests to finish it. To make the most of it, go for it with a spoon!
