The Bristol Paris chef has imagined a monochrome creation that is both pure and graphic.

Unveiling a white chocolate glaze, protected by a transparent case of sugar crystal stalactites, the interior is just as seductive, with the softness of a coconut mousse and the delicacy of an almond dacquoise.

The whole is enhanced by the pleasantly bitter touch of grapefruit confit. Inserts of fresh grapefruit add a touch of freshness.

Note that this ephemeral log is on sale exclusively at the Bristol Paris from December 1 to 31, 2016.
