Artisanal bakery-patisserie Maison Landemaine unveil four 100% vegan yule logs. And this is good news for vegans and those looking for new flavors!
Without butter, nor milk or eggs, this 100% plant-based Bûche Mont-Blanc pays tribute to the richness of flavors from nature an is first and foremost for vegan and non-vegan taste buds. It is based on almond crunch, blackcurrant and blueberry confit, chestnut paste and cream and Joconde almond cake. And do not believe that because it is plant-based it does not taste good or has no textures: here, the softness of almond and chestnut contrasts with the sourness of berries.
Landemaine also comes up with a more classical yule log: the Sakura yule log based on the iconic flavors of the Japanese gastronomy: sesame crunch and Shiro Koshian (or Japanese white bean paste), ginger and cherry blossom leaf crémeux, white chocolate and Mariage Frères' Fleur de Sakura tea mousse. The whole is also twisted with whipped Fleur de Sakura tea ganache.
Moving on to more classical yule logs, Landemaine provides the vanilla-lemon yule log and the chocolate-vanilla yule log.

Note that Landemaine also has a New Year's Day entremets available on December 31 only. Pastry chef Jean-Michel Briend shows his interpretation of the cherry blossom, symbol of beauty and sensibilities. A delicate creation mixing cherry blossom tea, Shiro Koshian, ginger and cherry blossom leaf crémeux and sesame crunch.
